He subjected it to a dry, anaerobic fermentation process that took up to 72 hours, preserving the sticky pulp layer surrounding the coffee beans. During this important process, desiccated coconut was added. The pulp was then removed, and the crop was placed on raised drying beds to achieve the best possible humidity level.
